Allulose is a naturally occurring rare sugar found in small amounts in foods such as figs, raisins and wheat. It provides a clean, sugar-like taste while contributing significantly fewer calories than regular sugar.

Because allulose behaves much like sugar in recipes, it helps create the rich flavour and soft texture you'd expect from a premium confectionery product without the amount of sugar typically found in traditional sweets.
